Our Public Service Goals

The Center for Food Science and Nutrition Research (CFSNR) serves as a centralized resource for applied research and educational activities related to food science and nutrition. As part of its mission to serve both public and private industries and their constituents, the center conducts its research with these primary objectives:

Seeking practical ways to improve public health and nutrition
Developing new food products
Applying and improving sensory evaluation techniques
Disseminating information to the public and private sectors
Offering continuing education for professionals

Academic Priorities

As part of its vision to remain singularly unified with its community, in step with advanced technology and at the forefront of discovery, the CFSNR has established the following academic priorities:

To facilitate collaborative work between California State University, Fresno and other educational institutions, as well as the food and health care industries
To provide a stimulating research environment for faculty, graduate and undergraduate students, and industry partners
To apply instructional technology to the development of new educational materials

Our Resources

Facilities for the CFSNR include a newly-remodeled sensory evaluation laboratory with space and equipment for consumer taste panels; a graduate lab with state-of-the-art computer and laboratory equipment, including a scanning electron microscope; a fruit and vegetable processing laboratory; and a dairy processing plant. Faculty researchers from an assortment of disciplines maintain close ties with their respective industries in order to ensure quality and viability of research.
